You’ve probably already seen a couple of recipes from The Ultimate Uncheese Cookbook (by Jo Stepaniak) on this blog - I posted her grilled cheese recipe a few weeks ago, and my pizza from last week used her version of melty mozzarella. I’ve really enjoyed her recipes so far!

If you love cheese but don’t or can’t eat it, I recommend picking up a copy of this book. The recipes are well-written and easy to follow, and they don’t use too many weird, hard-to-find, or unhealthy ingredients. A lot of cheese substitutes involve a ton of oil or nuts, so I love that she does a good job keeping her recipes relatively low fat. It’s a lot easier to feel like you’re choosing a healthy alternative if you don’t add in a cup of oil!

Another thing I personally enjoy is that while she does use nutritional yeast in many recipes, it’s not in all of them – and more importantly, they don’t all taste like it. I love nooch, but I don’t want every “cheese” recipe to taste like it.

The book has recipes for making your own replacements for solid block type cheeses, melty cheeses, and recipes with a heavy cheese component (soups, pastas, etc.). I haven’t nearly made them all yet, but I am looking forward to it!
