Instant Oatmeal Mix

I travel quite a bit, and finding healthy, satisfying food in an airport or train station can be a bit of a challenge. Breakfast especially is tough, so I came up with this tasty oatmeal mix that I can bring with me in a travel dish or even a plastic bag – all you need to do is add hot water! (And a bowl or cup. Please do not add boiling water to a plastic bag and blame me for what ensues.)

Of course, it can also just be a nice pantry item at home, no need to reserve it for traveling. It’s also really flexible – once you’ve got the oats you can pretty much throw any dry ingredient you like into the mix – dried fruit, nuts, spices – sky’s the limit! My technique for creating this particular recipe was to go to the bulk food section and ask myself what looked like it would be good in oatmeal, so it’s hardly finicky.

The only thing I would suggest leaving in is the dates – I used the pre-cut kind that are covered with oat powder:

But you could just chop up regular dates too (especially if you’re gluten free, I have no idea if that oat powder is GF or not). Since we need the mix to be entirely composed of dry ingredients, I couldn’t add maple or agave, so the dates are the primary sweetener. Feel free to add more or less, or other dried fruits could be good, too.

That’s about all there is to it – mix together some rolled oats (do make sure to get rolled, the steel cut won’t cook correctly with this technique), chopped nuts, chopped dried fruit, maybe a pinch of salt or cinnamon, and then just store it in an airtight container – I used a quart sized mason jar.

Once you’re ready to eat it, mix equal parts oatmeal and water (so if you want a half cup of oatmeal, add a half cup of water), cover the bowl or cup and let it sit for three minutes, and presto! You’ve got yourself a nice hearty bowl of oatmeal!

Instant Oatmeal Mix

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: Makes enough to fill a quart sized mason jar (about 4 cups)

Vegan, Gluten free if you use GF oats, Low Fat, Refined Sugar Free, Soy Free

Ingredients:

  • 2 1/2 cups rolled oats
  • 2 Tbsp carob chips
  • 3/4 cup chopped dates
  • 1/4 cup chopped walnuts
  • 1/2 cup dried shredded coconut
  • 1/4 cup ground flaxseed
  • 1/4 tsp cinnamon
  • 1/4 cup chopped peanuts
  • 1/4 tsp salt

Directions:

  1. Combine all ingredients in a large bowl until well mixed. Store in an airtight container until ready to eat. To prepare: in a small bowl or cup, combine equal parts hot water and oatmeal mix (for example, 1 cup water, 1 cup oatmeal), stir, and cover. Let sit for about three minutes and enjoy!
