Roasted Brussels Sprouts

Nutritious and delicious brussels sprouts

I feel like brussels sprouts have a terrible reputation.  They’re kind of the quintessential vegetable that kids don’t want to eat, aren’t they?  I can only assume that this is either the result of a devious and widespread smear campaign engineered by their competition (who would that be?  Broccoli?  Cabbage?  Candy?  Deep thoughts.) or else maybe people are just cooking them poorly.  All I know is that when you make them this way they are super tasty.

This recipe couldn’t get a whole lot simpler.  Cut some brussels sprouts in half.  Put them on a pan.  Spray them lightly with olive oil, sprinkle with salt, bake for 20 minutes or so. Voila, a nutritious and delicious side dish that even kids will eat.  Probably. You never really know with kids, do you?

Ingredients:

  • Brussels sprouts.  However many you feel like eating, really.  I usually have like 5-7 per person as a side dish.
  • Salt
  • Pepper (if you’re feeling really daring)
  • Olive oil
