Berry Salad with Microgreens

For an easy way to use microgreens, make this bright and fresh berry salad. Top it with creamy vegan feta and tangy lemon vinaigrette for a tasty appetizer, side dish, or entrée.

Step 1:

In a large bowl, toss the leafy greens, microgreens, berries, and chopped vegan feta cheese.

Divide between plates or bowls. Make the lemon vinaigrette if you haven't already or drizzle with a vinaigrette of your choice. Toss well and enjoy as a side dish or entrée.
