Carrot Ginger Dressing

This simple Carrot Ginger Dressing recipe can be made in less than 10 minutes. It’s perfect for zesty salads, wraps, or stir fry and contains just a touch of oil.

Ingredients

carrots fresh ginger rice vinegar agave nectar

white miso olive oil sesame oil water

Step 1:

Add all of the ingredients to a food processor or blender.

Instructions

Blend until mostly pulverized. Taste and add more ginger, miso, rice vinegar, sesame oil, and/or agave nectar. The dressing is meant to be chunky, but you can adjust for a smoother texture.

Spoon the dressing on top of salad or noodles. You can also use it as a dip for rolls or dumplings.

Steam the carrots. Steam the carrots for a smoother dressing. Add lime juice. For a more tart dressing, add fresh lime juice. Add garlic. Use 1 to 3 cloves or 1 teaspoon garlic powder.
