Roasted Asparagus and Mushrooms

Ready in 30 minutes, this roasted asparagus and mushrooms recipe is an easy side dish. It’s simple, healthy, and packed with umami flavor. Enjoy it with vegan meatloaf or your favorite pasta.

Step 1:

In a large bowl, combine the asparagus, mushrooms, garlic powder, salt, ground black pepper, and oil, and toss.

Spread the asparagus and mushrooms on a baking sheet lined with parchment paper.

Roast at 400° F for 15-20 minutes, tossing once halfway.
