Spring Roll Bowl with Savory Peanut Sauce

This healthy spring roll bowl features baked tofu, peanut sauce, and lots of veggies. It’s basically a delicious deconstructed spring roll in a bowl!

Step 1:

Pre-heat the oven to 400 degrees Fahrenheit. Cut the tofu into 1-inch cubes.

Step 2:

To make the marinade, combine the olive oil, soy sauce, grated ginger, and garlic powder in a small bowl.

Step 3:

Lightly coat the tofu in flour or cornstarch. Place on a metal baking sheet lined with parchment paper.

Step 4:

Bake for 25 to 30 minutes or until golden brown, flipping once halfway through.
