Vegan Green Bean Casserole

This vegan green bean casserole is a dairy-free version of the classic side dish. It features oven-baked “fried” onions, crispy green beans, & creamy mushroom sauce.

Ingredients

green beans yellow onion non-dairy milk flour garlic powder

vegan butter garlic mushrooms soy sauce salt and pepper

Step 1:

In a large bowl, combine the sliced onions and milk. Let soak for 15 minutes, tossing occasionally to make sure all of the onions are coated in milk.

Instructions

In a separate bowl, combine the flour and spices and whisk well. Add a handful of sliced onions. Toss to coat in the mixture, then transfer to a large baking sheet lined with parchment paper.

Repeat with the remaining onions, working in small batches. Coat generously with cooking spray. Bake for 25 to 27 minutes or until crispy, tossing once halfway.

Prepare a large pot of boiling water. Add the beans and boil until crispy and bright green, about 10 minutes. Drain immediately, transfer to a bowl, and set aside.
