Vegan Grilled Cheese

This vegan grilled cheese recipe is classic comfort food that’s quick to throw together. This recipe is easy, healthy, and dairy-free! Enjoy it for lunch or a snack.

Ingredients

vegetable broth pimiento peppers dijon mustard nutritional yeast garlic powder onion powder

tahini lemon juice corn starch rolled oats paprika salt bread

Step 1:

In a food processor or high-powered blender, combine all the ingredients except the bread and butter. Blend until fully combined.

Instructions

In a small pan or pot, bring the mixture to a boil. Simmer for 2 to 3 minutes or until thick, whisking constantly. It should develop a thick and gooey texture.

Melt butter in a large skillet and lightly pre-toast two slices of bread, if you’d like. Spread the about 1/3 cup of cheese filling on one slice. Depending on the size of your bread, you might need more or less.

Heat the sandwich in a large skillet over medium heat until golden brown, about 3 minutes on each side. We like to place the lid on the skillet to help melt the cheese a bit.
