Jackfruit Pulled “Pork” Sandwich, Carolina Style

This vegan pulled “pork” sandwich recipe uses Jackfruit and is prepared in an authentic Carolina BBQ style. It's a perfect week-night meal or as a dish at your summer BBQ.

Ingredients

jackfruit onion garlic sandwich bread For the wet sauce: tomato paste apple cider vinegar canola oil tamarind paste maple syrup For the dry rub: red pepper paprika cayenne mustard garlic powder onion powder salt and pepper

Step 1:

Preheat oven to 400 degrees. Cook onion in a skillet over medium low until caramelized and browned. Add garlic for the last minute, until fragrant.

Instructions

Mix together dry rub spices and toss jackfruit pieces in mixture until coated. Add to a medium saucepan and heat over medium heat for about five minutes to toast spices.

Step 2:

Add wet sauce ingredients to saucepan. Simmer jackfruit in sauce for 15-30 minutes until well heated and softened. Using a fork, shred the jackfruit pieces into small stringy bits.

Optional: Spread mixture evenly on a cookie sheet and bake for 15 minutes until slightly dried out and toughened for improved texture.
