Carrot Ginger Dressing

This is a the best kind of dressing – super easy to make, but it tastes interesting and complex enough that it comes across as fancy. Add in that it has almost no oil and you’re really good to go.

First, chop up some carrots. Peel them if you like, although I do recommend peeling before you chop, it’s much faster that way. Throw them in a blender or food processor. Next, peel a bit of ginger and toss that in there too, along with a bit of miso, some vinegar, and some sesame oil (but only a 1/4 teaspoon, so this is still definitely in the “low-fat” category). You’ll start with this:

It took me about 3 minutes in my food processor to get it to that consistency – it would probably be faster in a fancy blender but this worked fine.

Told you it was easy! This goes great on salad or mixed in with lots of asian dishes like stir fry or lettuce wraps.

Carrot Ginger Dressing

Prep Time: 5 minutes

Total Time: 5 minutes

Serving Size: About 1/2 cup dressing

Vegan, Gluten Free, Refined Sugar Free, Low Fat


  • 2 carrots, peeled and diced
  • About 1/2 inch cube of fresh ginger
  • 2 tsp white miso
  • 1/4 c. water
  • 1 tsp rice vinegar
  • 1/4 tsp sesame oil
  • 1/2 tsp agave nectar


  1. Add all ingredients to a blender or food processor and blend until very smooth.
