These days, we’re all starting to feel like we have a master’s degree in pantry and freezer cooking as we continue to remain safely at home during the coronavirus outbreak. Many of us are all also looking for a breakfast that isn’t cereal + [insert plant-based milk here]. Well, if you’re looking for a breakfast upgrade, you’re in luck: Behold, the Mandarin Orange Smoothie Bowl from Amy Gorin, MS, RDN, a registered dietitian in the New York City area.
A wonderful balance of salty pistachios with sweetness from shredded coconut and mandarin oranges, we also love how eating a smoothie in bowl form feels like more of a proper meal than sipping on a drink.
“If you’re looking for a delicious breakfast that can be made with mostly pantry ingredients, this is your meal,” comments Gorin of her vegan smoothie bowl. “If you can’t find fresh mandarin oranges, you can use ones canned in 100% juice or water. You get satiating healthy fat, fiber, and protein from the nuts and seeds in this recipe—plus additional fiber from the fruit.” Best of all, from start-to-finish, the nourishing breakfast takes only about five minutes to assemble.

Mandarin Orange Smoothie Bowl
makes 1 serving
prep time: 5 minutes; cook time: 0 minutes
- ¼ cup unsweetened coconut milk
- ¼ cup unsweetened vanilla coconut milk yogurt
- 1 teaspoon vanilla extract
- ½ frozen banana
- 1 ½ peeled seedless mandarin orange, divided
- ice, as desired
- 2 tablespoons pistachios
- 2 tablespoons dried shredded coconut
- 2 tablespoons chia seeds
How to make it:
- Blend coconut milk, yogurt, vanilla, banana, one orange, and ice as desired.
- Pour into bowl, and top with remaining orange wedges, pistachios, coconut, and chia seeds.
